Black Bean Salad (Recipe)

It’s the perfect dish to take to a potluck or family get-together. The perfect healthy dish to make and snack on during the week ensures you’re getting your veggies in for the week.

Black Bean Salad (Recipe)

Ingredients


  • 2 diced bell pepper use red, yellow, or orange you can also add a green in there if you like
  • ½ large red onion diced
  • 2 medium cucumbers diced
  • 15 cherry tomatoes cut in slices
  • 2 red or green jalapeños diced remove seeds for less heat
  • 4 ears of corn cut off the cob
  • 1 large handful of fresh cilantro chopped
  • 1 can black beans drained and rinsed
  • 1 cup feta cheese

For the dressing

  • 2 large limes juiced
  • ¼ cup extra virgin olive oil
  • 2 teaspoon pink salt or sea salt
  • 1 teaspoon black pepper
  • 2 tablespoon apple cider vinegar
  • 2 teaspoon honey

Instructions

  • 1.  Dice bell peppers into small chunks and put them in a large bowl.


  • 2. Dice cucumbers and red onion and add to the bowl.


  • 3. Slice cherry tomatoes into small slices and add them to the bowl.


  • 4. Chop the jalapeños into small chunks and add them to the bowl. Remove seeds for less heat.


  • 5. Cut the corn off of the cob and add it in. I have seen people use frozen corn but I think the texture would be weird.


  • 6. Chop the cilantro up really well and add to the bowl.


  • 7. Drain and rinse chickpeas and black beans and add to the bowl.
  • 8. Add in feta.

Dressing: 

  • Juice large limes into a small bowl
  • Add in olive oil, ACV, salt, pepper, and paprika.
  • Pour over the salad and mix well.
