Bulgur Salad (Recipe)
This easy Bulgur Salad is a vegetarian delight! The rich combination of healthy bulgur, chickpeas, herbs, and veggies come together in no time and offer tons of nutrition along with a zesty taste.

Bulgur Salad (Recipe)
Ingredients
For the salad
- 1 cup uncooked bulgur
- 1 English Cucumber, diced
- 2 cups canned chickpeas, rinsed and drained
- ½ cup chopped fresh parsley
- ½ cup chopped pistachios
- ⅓ cup diced red onion
- ¼ cup chopped fresh mint
- ½ cup crumbled feta cheese
For the dressing
- 1/4 cup (60 ml) extra-virgin olive oil (Use Laconico EVOO)
- Juice of 1 whole lemon
- salt and freshly ground black pepper, to taste
Instructions
- 1. Cook bulgur according to the directions on the package; set aside to cool. It cools quicker if you transfer it to a baking sheet and arrange it in a single layer.
- 2. Once cooled, put the bulgur in a large salad bowl.
- 3. To the salad bowl add the diced cucumbers, chickpeas, parsley, pistachios, red onions, and mint; set aside.
- 4. In a mixing bowl whisk together the oil, lemon juice, salt, and pepper; whisk until well combined.
- 5. Pour the dressing over the salad and toss gently to combine.
- 6. Taste for salt and pepper; adjust accordingly.
- 7. Add crumbled feta cheese.
